Monday October 14, members of the EPCAS Chefs assembly visited Rotterdam and the Westland, where they were among others guests at Koppert Cress. Part of the visit was a unique DNA dinner, in collaboration with Omnigen, compiled on the basis of a DNA test, where the composition of the menu reflected the personal nutritional needs of the guest. At the end of the dinner, the chefs from all over Europe prepared their own version of a dessert in Mother Earth concept, a tasteful, sustainable method of dish building.
The DNA dinner is an initiative of Vers + and Koppert Cress and gives a preview of individual-oriented nutritional advice. The combination of personal DNA analysis and the unique properties of foods offers the possibility of an optimal composition of dishes, whereby the body gets the nutrition it needs.
